Job Description
PRIMARY PURPOSE
To familiarize trainees with the Wilderness Way of service in relation to camp operations. It is also designed to hone leadership skills and appreciation of staff welfare, whilst building your communication, innovation and organizational skills.
KEY RESPONSIBILITY AREAS
- Manage fresh and bulk arrival, check fresh and bulk items received against invoice. Show ability to carry out stock rotation; distribute and record daily issues from the food stores.
- Understand FOH service sequence and Keep the FOH area in pristine condition at all times, especially checking before guests arrive to FOH for meals.
- Understanding the housekeeping cleaning sequence as per the wilderness way and ensure brand standards are adhered to.
- Check place settings before every meal (except Early morning)
- All cutlery & crockery is polished and arranged per standard
- All service ware is in order (coffee stations prepped, condiments in order etc)
- Ensure Daily Bar Records are being kept (usages for main bar, rooms and activities) and monitored and that all consumption is recorded, and losses to be reported to the General Manager.
- Demonstrate basic knowledge of cocktails and camp wines through short trainings at front of house.
- Monthly stock takes: (Bar stores, FOH softs & décor) and report on usages and any discrepancies.
- Authentically host guests.

CANDIDATE PROFILE
Qualification:
- Diploma/Degree qualification
Experience:
- 3 years plus experience in hospitality or related
